When I say a dish is easy, I mean that it includes few rare ingredients. On the other hand, when I say a dish is difficult, that means it needs a lot of rare ingredients. When I say a dish is "ridiculously" easy or difficult, that means the dish's difficulty rating is vastly different from its next nearest easy or difficult dish.

To be more specific - I have ranked each ingredient by their rarity. You can find this rating in the Restaurant City strategy guide on trading basics. For each dish I've taken their ingredients' rarity ratings and added them together, weighing the rarity 6+ ingredients a bit more heavily for a more accurate idea of difficulty.
